HARVEST
Manual harvesting in September.

VINIFICATION
manual harvesting in crates, soft pressing and extraction only of the free-run juice. Fermentation at low temperature, ageing of the wine for 8 months in steal tanks. After the second fermentation in bottle, it ages on the lees for at least 40 months before the remuage and the degorgement.

TASTING NOTES
bright straw yellow colour, fine and lingering perlage. Fresh and neat nose, with an array of hints of citrus fruit, crispy fruits and baking flavours. Fresh, enveloping and dry in the mouth with savoury and mineral notes. Persistent and harmonious, with a finish of nuts and candied peel.

FOOD PAIRINGS
Suitable for appetizers with delicate fi nger food. Remarkable with seafood risotto andt hroughout a complete meal.
