80-90 quintals of grapes.
HARVEST
Manually, end of September.
VINIFICATION
Light pressing, fermentation at controlled temperature in an inert atmosphere. Aging partly in french oak tonneaux for 6 months, partly in steel tanks. Malolactic fermentation not carried out.
ORGANOLEPTIC FEATURES
Intense strawyellow colour with golden tinges. Fruity aromas with hints of peach and apricot, honey and spices; delicately mineral. Pronounced palate, full-flavoured, pervasive and firmly structured with a long fruity finish.
PAIRINGS
Seafood, spicy white meats, medium mature cow milk cheese and herbed goat cheese.
