Manually, in September.
Manual harvesting in crates, soft pressing and extraction of the free run juice. Fermentation at a low temperature, refi nement of the wine for 8 months in stainless steel tanks. Re-fermentation in the bottle and aging on the lees for 60 months.
Brilliant straw yellow colour with a fi ne persistent perlage. The nose is fragrant, fresh with pleasant scent of exotic fruit, mangos, bananas, apples, delicate fl oral white bouquet with notes of aromatic herbs and almonds. Fresh and sapid on the palate with a silky alcoholic perception. Pleasant smoothness with lively perlage. Medium-long lasting persistence with a fruity aftertaste and slightly note of bitterness in the end, linked to the characteristics of the original vine.
Suitable for appetizers and delicate fi nger food. Remarkable with seafood risotto but it is perfect with every complete meal.
